Kalitsounia (Καλιτσούνια)

These are small cheese or herb pies that can be either sweet or savory, depending on the filling. The savory versions are typically filled with cheese (such as mizithra), wild greens, or a mixture of both, seasoned with herbs like mint or dill. The sweet version might include a sweet cheese filling with honey and cinnamon. They are a staple during local festivals and celebrations.
Ingredients:
- 500 grams of all-purpose flour
- 200 ml water
- 2 tbsp olive oil
- A pinch of salt
- 250 grams of mizithra or feta cheese
- A handful of chopped fresh herbs (such as dill, mint, or parsley)
- Olive oil for frying or brushing
Instructions:
- Make the Dough: Combine flour, water, olive oil, and salt. Knead until the dough is smooth. Let it rest for 30 minutes.
- Prepare the Filling: Mix the cheese with the herbs in a bowl.
- Shape the Pies: Roll out the dough thinly. Cut into rounds using a cutter or a glass. Place a spoonful of the filling on each round, fold over, and press the edges to seal.
- Cook: For savory pies, fry them in olive oil until golden on both sides. For baked versions, brush with olive oil and bake at 180°C (356°F) until golden.
- Serve: Enjoy warm or at room temperature.
