Sfakiani pita

This is a unique type of flatbread from the region of Sfakia. It’s not your typical pita; it’s filled with a sweet cheese mixture and then fried in olive oil. Often, it’s drizzled with honey and sprinkled with sesame seeds before serving.
These dishes highlight the Cretan diet’s focus on fresh ingredients, olive oil, and flavors enhanced by the island’s herbs and cheeses.
Sfakiani pita (Σφακιανή πίτα)
Ingredients:
- 500 grams of all-purpose flour
- 1 tsp salt
- Water as needed
- 200 grams of mizithra or ricotta cheese, sweetened with a little honey
- Olive oil for frying
- Honey and sesame seeds for serving
Instructions:
- Make the Dough: Mix flour and salt. Gradually add water and knead into a soft, pliable dough. Let it rest for 30 minutes.
- Prepare the Filling: Combine the cheese with a little honey.
- Shape the Pitas: Divide the dough into balls. Roll each ball into a flat circle, place a portion of the cheese mixture in the center, and fold the dough over to seal the filling inside.
- Cook: Heat olive oil in a frying pan. Fry each pita until golden on both sides.
- Serve: Drizzle with honey and sprinkle with sesame seeds.
